The perfect flourless and sugar-free cake for kids to eat: basic preparation
If you like cookies, buns, and pies, it's time to make them with seasonal healthy fruits and vegetables. Juicy carrots will be ideal, as they will make a wonderful and tasty cake that even children will enjoy.
Pastry chef Victoria Vorokh shared her recipe for a delicious and healthy carrot cake, which was published on the prikorm_ua Instagram page, with carrots as the main ingredient and takes only 15 minutes to prepare.
Ingredients:
- carrots - 100 g
- dried apricots - 100 g
- nuts - 100 g
- eggs - 4 pcs.
- baking powder - 1 tsp.
Method of preparation:
1. Pour boiling water over the dried apricots.
2. Finely chop the nuts or grind them in a coffee grinder.
3. Separate the whites from the yolks.
4. Wash, peel, and grate the carrots.
5. Add the cooked dried apricots to the yolks and beat.
6. Whisk the whites until peaky.
7. In a bowl, mix the carrots with the dried apricots and egg yolks, add the ground nuts and baking powder, and gradually mix the whites into the mixture with a spatula.
8. Cover the baking sheet with parchment, pour the dough in an even layer, and put in the oven for 15 minutes at 180 C.
9. The finished cake can be cut into rectangles or cut into circles with a pastry ring or mug.
10. Cream: mix fat yogurt, sour cream, cottage cheese, mascarpone, Philadelphia.
11. Whip the cold cream with a mixer, add the mascarpone, and whip again, add the banana, and spread over the cakes.
