Ingredients:

  • eggplant - 1 pc.
  • cherry tomatoes - 200 g
  • mozzarella - 60 g
  • black olives - 30 g
  • capers - 10 g
  • olive oil - 30 g

Method of preparation:

  1. Cut the eggplant into rings, make a grid on them with a knife, and drizzle with olive oil.
  2. Wash the tomatoes and cut them in half, chop the olives as well.
  3. Put the eggplants in a baking dish, and top with tomatoes, olives, mozzarella, and capers.
  4. Put the dish in the oven for 15 minutes at 180 C.

Before serving, sprinkle the dish with basil.
