Ingredients for the filling:

  • young nettles - 500 g
  • butter - 100 g
  • eggs - 3 pcs
  • green onions - 100 g
  • salt - to taste

For the dough:

  • eggs - 3 pcs
  • flour - 3 tbsp
  • water - 1 tsp
  • salt - 1 tsp.

Method of preparation:

  1. Knead the dough and refrigerate it.
  2. For the filling, wash the nettles with cold water, dry them, and chop finely together with green onions.
  3. Put in a frying pan, add oil and simmer over low heat for about 15-20 minutes.
  4. Beat the eggs with salt and add to the nettles. Mix well and simmer. Allow the finished filling to cool.
  5. Form dumplings and boil them for about 5-7 minutes.

2. With cheese and tomatoes

Ingredients:

  • cheese (ricotta, feta, mozzarella, Adyghe - to your taste) - 200 g
  • tomatoes - 4 pcs
  • tarragon - 1/2 bunch
  • butter - 4 tbsp
  • salt, pepper - to taste

Method of preparation:

  1. Make the dough and refrigerate it.
  2. Grate the cheese, peel the tomatoes, cut them into cubes and simmer in butter for about 5-7 minutes, add tarragon, salt and pepper and mix everything.
  3. Roll out the dough, put the filling and form the dumplings.
  4. Boil until tender.

3. With squid

Ingredients:

  • squid - 700 g
  • onion - 1 pc
  • eggs - 1 pc
  • garlic - 2 cloves
  • flour - 2 tbsp
  • boiling water - 2 tbsp
  • olive oil - 2 tsp
  • soy sauce - to taste
  • salt, pepper - to taste

Method of preparation:

  1. Mix flour and salt in a deep bowl, add 2 cups of boiling water and knead the dough. Gently add the olive oil and mix well. Cover the finished dough with cling film and leave for a while.
  2. For the filling, clean the squid, rinse well, dry, and pass through a meat grinder twice together with the peeled onion and garlic.
  3. Season everything well with salt and pepper and mix.
  4. Roll out the dough, put the filling and boil until tender.
