- peeled zucchini - 1.5 kg
- carrots - 500 g
- onion - 500 g
- garlic - 5 cloves
- refined vegetable oil - 125 ml
- sugar - 50 g
- salt - 25 g
- tomato paste - 150 g
- ground black pepper - 0.5 tsp
- 9% vinegar - 25 ml
Method of preparation:
1. Cut the onion into half rings.
2. Grate the carrots on a coarse grater.
3. Chop the garlic.
4. Heat the frying pan.
5. Pour in oil.
6. Add the onions, carrots and garlic.
7. Fry for 10 minutes, stirring occasionally.
8. While the vegetables are frying, cut the zucchini into small cubes.
9. When the roast is done, put it in a saucepan.
10. Add the zucchini, salt, and sugar.
11. Mix everything.
12. Cook over medium heat for 30 minutes after boiling, stirring occasionally.
13. When 30 minutes have passed, add ground pepper and tomato paste. Simmer for another 10 minutes.
14. Then add vinegar. Stir again.
15. Remove from the heat.
16. Beat with a blender until smooth.
17. Pour the caviar into sterilized jars.
18. Close with sterilized lids.
19. Turn over and keep under a warm blanket for a day.
