Eggplants are very healthy vegetables as they contain a lot of copper and iron, which are useful for anemia. They can be used to make various delicious dishes, such as warm salads, moussaka, stews, and caviar, which is considered a symbol of Odesa.

On his Instagram page, restaurateur and chef shared a recipe for real Odesa-style eggplant caviar.

Ingredients.

Ingredients:

  • eggplants weighing about 700 g - 3 pcs
  • large Mikado tomatoes - 1 pc
  • medium onions - 2 pcs
  • sunflower oil - 2 tbsp
  • garlic - 2-3 cloves
  • parsley - 0.5 bunch
  • salt - to taste

Method of preparation:

  1. Wash the eggplants, prick them with a fork so that they do not explode during baking, and bake at 200 °C. However, it is best to grill them so that taste of the caviar is "smoky".
  2. After that, put the eggplants on a board and leave them for 10-15 minutes to drain.
  3. Baked and peeled the tomato.
  4. Wrap the onions in foil and bake them at 220 °C for 10 minutes.
  5. Wait until all the vegetables have cooled well.
  6. Finely chop the eggplant, tomato, and onions. Squeeze in the garlic and then chop the vegetables to get a smooth consistency.
  7. Chop the herbs and add them to the caviar together with oil.
Be sure to add oil and salt.

Salt before serving.
