How to cook eggplant caviar deliciously
Eggplants are very healthy vegetables as they contain a lot of copper and iron, which are useful for anemia. They can be used to make various delicious dishes, such as warm salads, moussaka, stews, and caviar, which is considered a symbol of Odesa.
On his Instagram page, restaurateur and chef shared a recipe for real Odesa-style eggplant caviar.
Ingredients:
- eggplants weighing about 700 g - 3 pcs
- large Mikado tomatoes - 1 pc
- medium onions - 2 pcs
- sunflower oil - 2 tbsp
- garlic - 2-3 cloves
- parsley - 0.5 bunch
- salt - to taste
Method of preparation:
- Wash the eggplants, prick them with a fork so that they do not explode during baking, and bake at 200 °C. However, it is best to grill them so that taste of the caviar is "smoky".
- After that, put the eggplants on a board and leave them for 10-15 minutes to drain.
- Baked and peeled the tomato.
- Wrap the onions in foil and bake them at 220 °C for 10 minutes.
- Wait until all the vegetables have cooled well.
- Finely chop the eggplant, tomato, and onions. Squeeze in the garlic and then chop the vegetables to get a smooth consistency.
- Chop the herbs and add them to the caviar together with oil.
Salt before serving.
