The liver is a very healthy product, but even so, it is an amateur's choice. Because it is often disliked because of its specific odor. But if this product is properly prepared – boiled, baked, fried, made into a cake, pies, or added to pies and dumplings – there is no better ingredient for such dishes.
Food blogger Olha Matviy shared a simple recipe for a delicious liver cake with mushrooms on her YouTube channel that will become your favorite (to watch the video, scroll to the end).
Useful life hacks:
- prepare the dough with a blender;
- be sure to add oil and milk to the dough to make it tender and flavorful;
- add butter to the vegetables while frying.
Ingredients:
- Chicken liver - 500 g
- Milk - 220 ml
- Flour - 130 g
- Eggs - 3 pcs.
- Salt - 1 tsp
- Onions - 2 pcs.
- Carrots - 2 pcs.
- Marinated mushrooms - 100-150 g
- Garlic 1-2 cloves.
- Mayonnaise - 100 g
- Greens - a bunch
- Oil - 2-4 tbsp.
Method of preparation:
1. Wash and peel the liver from the films.
2. Put it in a bowl, add eggs, salt, pepper, milk, oil and whisk until smooth.
3. Fry the pancakes.
4. Filling: cut the onion into a large cube and fry it first in butter, add grated carrots, salt, and pepper, and transfer the fried meat to a plate to drain off the excess fat.
5. Add the grated garlic to the mayonnaise.
6. Form the cake: grease each pancake with mayonnaise, top with onions and carrots, chopped mushrooms, and sprinkle with chopped herbs.
7. Sprinkle the cake with herbs on the top and sides, refrigerate it for a few hours, and you're ready to serve.
