The most delicious cold borscht on kefir: will save from the summer heat

The last days of summer will be quite hot for Ukrainians. In such cases, the situation is saved by cold borscht. This dish is prepared on the basis of kefir, so it turns out to be very refreshing.

The idea of preparing cold refreshing borscht is published on the page of cook Olga Riabenko (olga riabenko) in Instagram. In addition to kefir, you need to add a little water.

Ingredients:

  • boiled or baked beets - 400 g
  • cucumbers - 3 pcs. (medium)
  • boiled eggs - 4 pcs.
  • greens (dill, green onions)
  • kefir - 1 liter
  • water - 1 liter
  • salt
  • sugar
  • citric acid

Method of preparation:

1. Finely chop the greens and send them to the pot.

2. You can salt and rub with a spoon to give the greens more flavor and aroma.

3. Grate the cooked beets, eggs and fresh cucumbers into a large grater.

4. Pour kefir over everything and dilute with water to the desired thickness (approximately 1:1).

5. Add salt, sugar, citric acid or lemon juice to taste.

6. Let infuse in the refrigerator for several hours.
