Lana Fore, a nutritionist, explained on her website the benefits of kale and what can be cooked with it.

"Green cabbage is a leader in potassium content, which regulates the body's fluid balance and prevents cardiac disorders," the expert explained.

4 useful properties of cabbage:

1. Kale contains many vitamins, minerals, and fiber. In addition, it is low in fat and calories, making it an ideal main dish or side dish.

2. It is rich in antioxidants, containing two important flavonoids - kaempferol and quercetin. They have anti-inflammatory and antimicrobial effects and also protect cells from free radicals.

3. Green cabbage contains vitamins C and E, which strengthen the immune system and protect cells from free radicals, as well as vitamin K, which is important for normal blood clotting.

4. It is also rich in vegetable protein and is second only to carrots as a source of beta-carotene. Beta-carotene is very important for normal vision, and lutein, which is also found in cabbage, helps protect the eyes from age-related damage.

How to cook green cabbage correctly

It can be used to make salads, stewed, roasted in the oven with other vegetables, and used to make delicious smoothies.

Lana advises:

1. Before cooking, rinse thoroughly in cold water to remove any earthy residue, and be sure to dry.

2. Then cut the leaves from thick branches and cut them into thin strips and blanch.

Ingredients:

  • green cabbage - 100 g
  • garlic - 1 clove
  • eggs - 2 pcs.
  • bread - 2 pieces
  • avocado - 1/2 pc.
  • olive oil - 1 tsp.
  • green onions - 2 stalks
  • lemon juice - 1 tsp.
  • salt, pepper - to taste

Method of preparation:

1. Wash, dry, and chop the cabbage.

2. Boil water, add salt and chopped cabbage for 5 minutes, and blanch.

3. Immediately drain in a sieve.

4. Chop the garlic, and cut the onion into thin rings.

5. Mix the onion and garlic with the cabbage, season with salt and pepper, and stir.

6. Remove the pit from the avocado. Cut the flesh of one half into slices.

7. Prepare a poached egg.

8. Toast the bread.

9. Put the sliced avocado on the toast, green cabbage on it, and an egg on top.
