To preserve delicious tomatoes for the winter, you need just a few simple ingredients. These vegetables don't need a special marinade because they are juicy and firm enough as it is. The main thing is to add enough preservatives and make sure that the fruit is fresh and of high quality.
The fastest recipe for tomatoes for the winter was shared by food blogger Liudmyla (everyday.lucy) on Instagram. The proportions for the marinade are calculated per liter of water.
Ingredients for the marinade for 1 liter of water:
- salt – 1 tbsp
- vinegar (9%) – 1 tbsp
- sugar – 2 tbsp of sugar
Method of preparation:
1. First, measure the required amount of water for the marinade by pouring water into the filled jars with a liter vessel. Put bay leaves, black peppercorns, a few cloves of garlic, a small onion (sliced into rings), and thinly sliced carrots (also small) in the jar.
2. Add parsley with root and leaves, dill leaves, black currant leaves.
3. Add the tomatoes.
4. Add a few strips of sweet pepper, if desired.
5. Pour boiling water twice for 20 minutes.
6. For the third time, pour the water from the jars into a saucepan, make a marinade, adding spices.
7. Pour the hot marinade over the tomatoes and roll up with sterilized lids.
8. Turn the jars upside down until they cool completely.
9. Store in a cold place.
