Alex Yakutov, the chef of the reality TV show Hell's Kitchen (New Channel), told FoodOboz exclusively what is best to eat in the fall, as well as shared the best recipes for autumn dishes and gave tips to help you prepare delicious dishes with ease.

"In the fall, you want food to warm you up. And the soup perfectly copes with this task. Pumpkin puree soup is a great seasonal first course. I love it very much myself. And even a non-professional can handle it," the chef said.

Soup recipe and cooking tips from Alex Yakutov

  1. All you need to do is cook the chicken broth.
  2. While it's cooking, bake the pumpkin. It's easy to do. Cut it in half, remove the seeds, add rosemary, and a little garlic, drizzle with oil, and wrap it in foil. Put it in the oven.
  3. When it is soft, remove and peel the skin.
  4. Strain the broth. Fry the onions and carrots in a frying pan, add some rosemary and garlic.
  5. Add the baked pumpkin to them. Fry it. Then blend the fried vegetables in a blender, adjusting the thickness by adding broth.
  6. You can also add coconut or regular cream to the soup.
  7. Season to taste with salt, pepper, lemon juice, and sugar. And enjoy a healthy first course.

The chef recommends using pellet tomatoes for this dish.

They should be the #1 must-have in your home. They last for years and are a great help when you need to cook something quickly. By the way, you can preserve them yourself. You can also take plain tomatoes instead of pellet.

Recipe.

  1. Cut the eggplant into slices or circles. Fry on both sides in a frying pan in a large amount of oil. Put them on napkins to drain the excess glass. Then put them in a gastronomic vessel. Take the pelata tomatoes.
  2. Blend the tomatoes with a blender, add sugar and salt to taste. You can dilute it with water if the sauce is too thick.
  3. Now put the eggplants, sprinkle with parmesan, and pour over the tomatoes. And so on in layers.
  4. Cover the last one with cheese. Put them in the oven for 15-20 minutes. Bake at a high temperature.

"I always have puff pastry in the freezer, and I make a French upside-down pie with it. It's just a thrill," says Alex Yakutov.

How to make a delicious pie:

  1. Preheat the oven, chop the apples and pears.
  2. Take a frying pan, pour sugar, melt the caramel. Add a cinnamon stick. Once the caramel is melted, put the fruit in the mold, pour the caramel on top, and cover it with dough.
  3. Put it in the oven. Then take it out and let it cool down a bit. Take a plate and turn the cake over.

"It's delicious to eat it with ice cream. It sounds cold, but it's not. The pie is warm. It's a real bliss," Yakutov added.
