The best recipe for the iconic Lviv cheesecake: how to make a dessert for the whole family
Lviv syrnyk is one of the traditional Ukrainian desserts. The dish is exquisite in appearance and very tender and sweet in taste. The curd mass goes well with the icing. It can be cut like a cake.
The idea of making sweet Lviv cheesecake with icing was published on the Instagram page of food blogger Natalia with the nickname smak nata. You don't have to knead the dough.
Ingredients:
- 9% cottage cheese - 600 g
- eggs - 2 pcs
- salt - a pinch
- sour cream 20% - 50 g
- 82% butter - 50 g
- corn starch - 30 g
- zest of 1/2 lemon
- sugar - 50 g
- dried plum - 30-50 g
- milk chocolate - 80 g
Ingredients for the icing:
- milk chocolate - 180 g
- ghee - 15-20 g
Method of preparation:
1. Beat cottage cheese, eggs, salt, sour cream, melted butter, and starch in a blender.
2. Divide the mass in half if your mold has straight walls. If the mold is wider at the top and narrower at the bottom, set aside 400 g of the mass and add zest, sugar and chopped dried plum.
3. Mix everything well.
4. Combine the remaining mass with the melted chocolate.
5. Put the citrus mass into the mold and smooth it out.
6. Top with the chocolate mixture, smooth out and bake at 170 degrees for 40 minutes.
7. First, the sides of the cheesecake rise up, then the center.
8. Once the cheesecake has risen, turn on the oven and take it out after 5 minutes.
9. As it cools, the cheesecake drops to the level it was before baking.
10. When completely cool, cover with cling film and put in the refrigerator for 5 hours or overnight.
11. For the icing, melt chocolate in a water bath until smooth.
12. Add melted butter and mix.
13. Take the cheesecake out of the refrigerator, turn it over onto a wire rack and pour the icing over.
14. When the icing has set, transfer the cheesecake to a dish and refrigerate for 30 minutes.
15. Cut into portions.
