With the help of marinade and spices, you can make the meat soft and have a wonderful, spicy flavor, but thanks to sauces, you can open up and sometimes give a completely different, incredible taste to the dish.

Ingredients:
- Pitted cherries - 600 g
- Rosemary - 1 sprig
- Balsamic vinegar - 80 g
- Sugar - 2 tbsp
- Red onion - 1 pc.
- Salt, pepper - to taste
Method of preparation:
1. Defrost the cherries, half – 300 g, put in a saucepan.
2. Add balsamic vinegar, and sugar, stir, and put on fire.
3. Bring the cherry mixture to a boil, transfer to a blender, and whisk until smooth.
4. Strain the resulting mixture through a sieve, pour it back into the saucepan, and add the remaining cherries, salt, and pepper and bring to a boil again.
Pour the hot sauce over the meat immediately and serve.
2. Ginger sauce with sesame seeds
Ingredients:
- Oil - 60 g
- Soy sauce - 3 tbsp.
- Rice vinegar - 3 tbsp.
- Grated ginger - 1 tbsp.
- Sugar - 1/2 tbsp
- Salt - to taste
- Green onions - 5-6 pcs.
- Sesame seeds - 1 tbsp.
Method of preparation:
1. Pour the oil into the blender bowl, add soy sauce, rice vinegar, and sugar.
2. Grate the ginger on a fine grater and add to the same.
3. Blend the whole mixture until smooth, add chopped green onions, and blend again.
4. Finally, add the sesame seeds and whisk again.
This sauce can be used for both meat and fish.
3. Hot sauce with garlic and cilantro
Ingredients:
- garlic - 6 cloves.
- chili pepper - 1/2 pc.
- olive oil - 100 g
- apple cider vinegar - 50 g
- cilantro - 2-3 tbsp.
- salt - 0.5 tsp.
- sugar - 1 tsp.
- dill and parsley - a handful
Method of preparation:
1. Put the garlic in a blender, and add olive oil, and apple cider vinegar.
2. Then add cilantro, dill, parsley, and half the chili pepper.
3. Add salt and sugar and mix until smooth.
Season the hot meat with the prepared sauce, it will be very tasty and flavorful.
