Tender and spongy Polish Mazurka cookies: bake in 20 minutes
"Mazurka is an amazing Polish cookie with nuts and raisins. It has a special texture, turns out very fluffy, spongy, soft and incredibly tender.
Food blogger Natalia Parkhomenko shared the recipe for Polish Mazurka cookies on her YouTube channel(Natasha Parkhomenko) .
Ingredients:
- walnuts - 120 g
- raisins - 150 g
- eggs - 3 pcs
- salt
- sugar - 150 g
- flour - 160 g
- leavening agent - 7 g
Method of preparation:
1. Pour hot water over raisins and leave for 10 minutes.
2. Lightly toast and chop nuts.
3. Add a pinch of salt to the eggs. Beat with a mixer until frothy.
4. Gradually add the sugar, continuing to beat until light and fluffy.
5. Mix the flour with the baking powder and add to the mixture in batches. Stir with a spatula.
6. Add nuts and raisins to the dough. Stir.
7. Pour the finished dough into a mold lined with parchment. Bake at 180 degrees for 15-20 minutes.
8. Finished shortcake cut in the form of cookies.
