If eggplants are cooked properly, they will taste better than meat. To prevent the vegetable from becoming bitter, you need to salt it, cover it with water and leave it for at least 30 minutes. Eggplants can be baked, fried, stewed, and pickled to perfection!
The cook shared a recipe for delicious eggplant spread with onions, garlic, and tomato paste on Instagram.
Ingredients:
- Eggplant - 2 pcs (medium)
- Bell pepper - 2 pcs (large)
- Hot pepper - 1 pc
- Tomatoes - 2-3 pcs
- Onions - 1 pc
- Tomato paste - 2 tbsp. l
- Garlic - 2-3 cloves.
- Parsley - 1 small bunch
- Salt.
- You can add flavored homemade oil
Method of preparation:
1. Drizzle eggplant, 2 types of peppers, tomatoes with oil, make holes with a knife or fork and bake until tender.
2. Peel and dice the onion, fry until golden brown.
3. Peel and chop the baked vegetables with a knife.
4. Add the tomato paste to the onion and fry for another 2-3 minutes. Add chopped vegetables and simmer. Add a little water if necessary. Simmer for 5 minutes. Add chopped parsley, chopped garlic and salt to taste. Simmer for another 2-3 minutes.
