Tastier than pancakes: Caesar-style zucchini roll with delicious sauce in 20 minutes
Zucchini can be used to make a lot of delicious, light, and budget-friendly dishes in the form of casseroles, rolls, pancakes, fritters, salads, and pasta. They can also be canned and made into stews.
The chef shared a recipe for a delicious zucchini roll that will taste like a Caesar salad on Instagram.
Ingredients:
- zucchini - 1 kg
- eggs - 2 pcs
- rice flour - 2 tbsp (you can choose any)
- salt and pepper to taste
Sauce:
- yolks - 2 pcs.
- grain mustard - 1 tsp
- lemon juice - 1/2 tbsp
- oil - 4 tbsp (2 sunflower, 2 olive)
- Worcestershire sauce - 1 tbsp
- anchovy fillets - 4 pcs
- garlic - 2 cloves
- parmesan cheese - 4 tbsp.
Extra:
- tomatoes - 1 pc.
Method of preparation:
1. Grate the zucchini and sprinkle them lightly with salt. Squeeze out the juice after 5 minutes.
2. Add eggs, flour, salt and pepper, mix and spread on parchment no more than 1 cm thick. Bake at 200 C with convection for 20 minutes.
3. Mix all the ingredients for the sauce and grease the finished roll. Put the chopped tomato on top and roll it up.
Put the finished roll in the refrigerator to stabilize and then cut it into portions.
