Tastier than meat: eggplant with fried cheese and tomatoes

Eggplant is an ideal vegetable for baking and preparing delicious appetizers, salads, and caviar. They can also be canned, stewed, and baked.

The cook shared a recipe for delicious fried eggplant with Adyghe cheese and spices on Instagram.

Ingredients:

  • Eggplant - 1 pc.
  • Tomato - 1 pc.
  • Adyghe cheese 3-4 pieces
  • Salt and pepper - to taste
  • Mexican seasoning - 1 tsp.
  • Olive oil - 1 tbsp.
  • Greens - a small bunch
  • Garlic - 1-2 cloves.

Method of preparation:

1. Cut the eggplant into slices, season with salt and pepper, and fry on both sides.

2. Also cut the cheese and grill it on both sides.

3. Finely chop the tomatoes, add the herbs, grated garlic and spices, and mix.

4. Place the eggplant on a platter, top with the vegetable mixture and cheese.
