Baked eggplant with cheese

The cook shared a recipe for delicious baked eggplant with cheese, tomatoes, and mayonnaise on Instagram.

Recipe of the dish

Ingredients:

  • eggplant – 2-3 pcs
  • tomatoes – 2-3 pcs
  • cheese – 200 g
  • mayonnaise – 70-100 g
  • olive oil (can be ordinary) – 3-5 tbsp
  • garlic – 3 cloves
  • salt to taste
  • ground black pepper – 1/2 tsp
  • suneli hops or Provencal herbs – 1 tbsp

Method of preparation:

1️ Add the chopped garlic, suneli hops, or Provencal herbs and ground black pepper to the olive oil and mix well.

2️. Wash the eggplant, and cut it into slices 5-6 mm thick.

3. Transfer the parchment and brush each eggplant slice with the dressing. Then add salt to taste.

4. Put the tomatoes and cheese on the eggplant, sliced in half rings. Make a grid of mayonnaise on top (adjust the amount).
