In the summer, you always want to eat cold and light dishes, among which okroshka, cold borscht, takes a special place. To make it, you'll need boiled and fresh vegetables, kefir, and spices.

The cook shared on Instagram a recipe for a delicious cold borscht made from boiled beets and fresh cucumbers.

Recipe of the dish

Ingredients:

  • Beets - 400 g
  • Cucumbers - 3 pcs.
  • Eggs - 4 pcs.
  • Greens (dill, green onions)
  • Kefir - 1 liter
  • Water - 1 liter
  • Salt
  • Sugar
  • Citric acid

Method of preparation:

1. Finely chop the greens and put them in a saucepan. You can add salt and grind with a spoon to give the greens more flavor and aroma.

2. Grate the boiled beets, eggs, and fresh cucumbers on a coarse grater. Pour over the kefir and dilute with water to the desired thickness (approximately 1:1).

4. Add salt, sugar, citric acid, or lemon juice. Let stand in the refrigerator for several hours.
