Tastier than cheesecakes and casseroles: "Galician" poppyseed breakfast cheesecake
Cottage cheese is not only healthy but also a very good product for making cheesecakes and casseroles. You can make casseroles for breakfast or as a dessert.
Cook Yulia shared on Instagram a recipe for a delicious Galician poppyseed-based cheesecake that is very tender and light.
Ingredients:
Dough:
- flour - 1 cup
- margarine/oil - 100 g
- egg yolk - 1 pc.
- sugar - 2/3 cup
- poppy seeds - 3-4 tbsp.
- baking powder - 1/2 tsp.
Curd mass:
- cottage cheese - 700 g
- butter - 120 g
- yolks - 5 pcs.
- proteins - 2 pcs.
- sugar - 1 cup
- orange or lemon zest
- semolina - 1 tbsp.
- raisins -1/2 cup
- vanilla sugar - 1 p.
Glaze
- chocolate - 160 g
- oil (odorless) - 20 g
Method of preparation:
1. Base: sift the flour with baking powder, put it on the surface, add the butter and chop with a knife until smooth, add the poppy seeds and the egg yolk grated with sugar and mix again until smooth. Spread the base on the bottom of a baking dish covered with parchment, greased with butter and sprinkled with breadcrumbs. Bake in a preheated oven for 10 minutes at 160 C.
2. Cottage cheese mass: beat the cottage cheese with a blender until smooth, add soft butter, part of the sugar and separately beaten egg yolks with the rest of the sugar. Add vanilla, semolina, zest and separately whipped whites. Mix gently until smooth, then add the soaked raisins sprinkled with flour. Mix again and spread on the base. Bake for 50 minutes at 160 C.
3. Glaze: melt the chocolate in a water bath, add the butter, stir, cool and pour over the finished cheesecake.
