Tastier than borscht and cabbage stew: hearty Polish bigos for lunch and dinner

Bigos is a traditional Polish dish based on meat and cabbage. According to the classic recipe, it is made from a mixture of fresh and sauerkraut. Various meat ingredients, smoked meats, dried fruits, and alcohol are added to the dish. It is better to prepare the dish in advance so that it can infuse and taste particularly rich.

Ingredients:
- 1 head of young cabbage
- 600-800 g of pork ribs
- oil
- 1 piece of onion
- 100 g of dried white mushrooms
- 2 tbsp ketchup
Spices:
- Mexican hot
- garlic salt with herbs
- smoked paprika
- for stewed dishes
Method of preparation:
1. Fry the ribs, add spices, onions, and pre-soaked porcini mushrooms. Add the water from the mushrooms, and a little plain water, and simmer for 1.5 hours.
2. Finely chop the cabbage, add to the pan, add ketchup, and simmer for another 15-20 minutes.
