Tastier and healthier than green borscht: easy cheese soup with broccoli, chicken meat and vegetables for the whole family
Homemade soups can be made from various vegetables, meat, fish, seafood, and cheese. For a more hearty version, it is better to add cereal or pasta.
The cook shared a recipe for a delicious, hearty and very easy-to-make cheese soup on Instagram.
Ingredients:
- chicken thigh - 4 pcs.
- processed cheese - 250 g
- potatoes - 2 pcs.
- carrots - 1 pc.
- onion - 1 pc.
- leek - 50 g
- orzo pasta - 50 g
- broccoli - 150 g
- salt and pepper
- bay leaf - 1 pc.
- ghee - 20 g
- parsley - 10 g
- water - 2.5 liters
Method of preparation
1. Cook broth from meat, onions and bay leaf as usual.
2. Dice potatoes and cook in the broth until tender.
3. Chop leek and grate carrots on a coarse grater and fry everything in vegetable oil for 5-7 minutes. Then add to the broth.
4. Add processed cheese and stir well to dissolve it completely. Then add pasta and cook for 10 minutes.
5. Disassemble the broccoli into florets. Add to the pot and cook for 2 minutes.
Serve the soup with fresh parsley!
