Summer is coming - it's time for delicious, homemade pies with sweet berry and fruit fillings. And there are no rules here, there is only imagination - any fruit can become an amazing filling for a delicious, flavorful pie.

Plum and pear pie
Ingredients for the dough:
- eggs - 3 pcs.
- sugar - 90 g
- leavening agent - 1 tsp.
- flour - 130 g.
- milk - 235 ml.
- butter - 10 g
- salt - pinch
Filling:
- pear - 2 pcs.
- plums - 3-4 pcs.
- caramel sugar - 4 tbsp.
- cream - 200 ml
Method of preparation:
- Beat eggs with sugar to a lush foam, to the same add milk and sifted flour and leavening agent.
- The resulting dough is carefully transferred into an oiled mold and sent to the oven for 30 minutes at 200 C.
- Pears and plums cut into slices, send sugar into the pan and add the fruit, mix well, and leave for about 5 minutes to caramelize.
- Ready pie take out of the oven, let cool down well and put caramelized plums and pears. The pie is ready.
Pie with cottage cheese and kalina
Ingredients:
- cottage cheese - 150 g
- sugar - 80 g
- eggs - 2 pcs
- vanillin - 10 g
Filling:
- Kalina berries - 100 g
- sugar - 100 g
- water - 80 ml.
- Quick-soluble gelatin - 20 g
Method of preparation:
- In a blender or mixer pulverize cottage cheese, eggs, sugar and vanillin to a homogeneous mass.
- On the ready cooled crust of sand dough lay the cottage cheese filling and again send to the oven for 10-15 minutes.
- For the filling: wash well the berries of kalina, after - boil them until soft and grind them well through a fine sieve and add sugar to taste.
- Add gelatin and stir well.
- Pour the cooled pie with hot filling and send it to the refrigerator for 2-3 hours, or even more.
Chocolate-berry pie with cottage cheese soufflé
Ingredients for sponge cake batter:
- eggs - 3 pcs.
- flour - 180 g
- sugar - 120 g
- refined sunflower oil - 80 ml
- milk - 80 ml
- cocoa powder - 20 g
- leavening agent - 5 g
- 2-3 pinches of salt
- vanilla sugar - 5 g
Filling:
- cottage cheese - 500 g
- sour cream - 250 g
- sugar - 100 g
- gelatin - 20 g
- water - 100 ml.
- vanilla sugar - 10 g
- berries, almonds - 20-30 g each
- juice, syrup for impregnation - 100 ml
Method of preparation:
- Combine all the loose ingredients, stirring to combine.
- Beat three eggs with sugar, salt, and vanilla sugar until white, airy foam.
- Warm the milk well and pour in the same, stirring gently so that the eggs don't come back.
- Add the dry mixture and once again stir slowly.
- Place the dough in a greased mold and send it to the oven for 35-40 minutes at 180 C.
- Mix cottage cheese with sugar, sour cream and pre-softened gelatin.
- Place the first layer of berries on the cooled crust, top with cottage cheese mixture.
- Sprinkle nuts on top and send to the refrigerator.
