Summer Olivier salad: here is what to add to change the taste of a familiar dish

Olivier salad is always a relevant dish both for a festive and for everyday table. If you want the salad to be lighter, add fillet, shrimp, squid instead of sausage, and fresh cucumbers instead of pickles. Potatoes can be removed for good.
Chef Valentyna Saienko shared a recipe for a summer Olivier, which is made without sausage but with fresh cucumbers and peas, on Instagram.
Ingredients:
- smoked fillet or boiled tongue - 600 g
- potatoes - 500 g
- carrots - 200 g
- eggs - 5 pcs.
- frozen peas - 250 g
- pickled cucumbers - 200 g (can be without)
- fresh cucumber - 1 pc.
- green onions - 5 shoots
- onion - 1/2 pc.
Dressing:
- mayonnaise - 5 tbsp.
- grain mustard - 2 tbsp.
- olive oil - 1 tbsp.
Method of preparation:
1. Boil the vegetables and cut them into cubes. Finely chop the cucumbers as well.
2. Cut the meat into cubes.
3. Blanch the peas for 2 minutes in boiling water and immediately transfer them to cold water to retain their color.
4. Finely chop the onion. It is not necessary to add it.
5. Mix everything for the sauce.
Dress the salad with the sauce, mix and refrigerate for 1 hour!
