Summer apple dessert with strawberries: no baking and freezes quickly
In the summer, you don't really want high-calorie pastries made from dough. Therefore, the ideal option is to make a light cheesecake based on fresh apples and strawberries. The mass hardens perfectly in the refrigerator and looks very aesthetically pleasing.
The idea of making an apple dessert with strawberries without baking was published on the Instagram page of food blogger Natalia with the nickname smak_nata. It turns out to be a full-fledged festive cake.
Ingredients for caramelized apples:
- water - 50 g
- sugar - 70-100 g
- peeled apples - 3 pcs. (360 g)
- lemon juice - 15 g
- butter 82.5% - 30 g
- zest of 1/2 lemon
Ingredients for the cheese layer:
- cottage cheese 9% - 400 g
- caramelized apples - 360 g
- gelatin 180 blum - 18 g
- water - 90 g
Ingredients for the chocolate layer:
- milk chocolate - 90 g
- cream 20% - 70 g
- gelatin 180 blum - 4 g
- water - 20 g
Ingredients for the compote:
- strawberries - 150 g
- sugar - 30 g or to taste
- lemon juice - 5 g
- zest of 1/2 lemon
- mint - optional
- water 300 g
Ingredients for the strawberry layer:
- strawberry compote 150 g
- gelatin 180 Blum 5 g
- compote for gelatin 25 g
- strawberries for decoration
Method of preparation:
1. Cover the bottom of the mold with cling film. Put the acetate film inside.
2. Pour cold water over the gelatin and leave for 15 minutes. Or cook according to the instructions.
Ingredients for caramelized apples:
1. Pour water into a frying pan.
2. Add sugar, cook the syrup for 1-2 minutes.
3. Add the sliced apples and simmer, covered, until softened for 15 minutes.
4. Pour in lemon juice, add zest, butter.
5. Turn up the heat to maximum.
6. When the apples are golden brown, it's ready.
Method of preparation of the cheese layer:
1. Add apples to the cottage cheese and beat until smooth. You can taste and adjust the sugar to taste.
2. Dissolve the gelatin and pour into the mass, combine.
3. Pour into the mold and refrigerate for 30 minutes.
Ingredients for the chocolate layer:
1. Pour the cream into the chocolate and combine in a water bath until smooth or in the microwave.
2. Pour in the gelatin, mix and pour on the frozen layer.
How to prepare the strawberry layer:
1. Cut the strawberries into slices.
2. Make compote from the scraps.
3. Add the strawberries, lemon juice, sugar, zest, mint, and water to the saucepan.
4. After boiling, cook for 1 minute.
5. Cool and strain 150 g of compote.
6. Pour gelatin over cold compote and leave for 15 minutes.
7. Dissolve the gelatin and pour it into the compote, pour 80 g of the compote over the frozen chocolate and refrigerate for 30 minutes.
8. Put a layer of strawberries and pour over the remaining compote.
9. Cover with cling film and refrigerate for at least 4 hours.
10. Before serving, garnish with mint, cut into portions and enjoy.
