Stuffed zucchini with chicken
A week of recipes from seasonal products.
To prepare⠀we will need:⠀
- zucchini 3 pcs.⠀
- chicken fillet 200g.⠀
- tomato 1-2 pcs.⠀
- dill and parsley to taste⠀
- garlic 3 cloves ⠀
- Greek yogurt 200 g.⠀
- hard cheese 200 g.⠀
- salt ⠀
- pepper⠀
Preparation⠀
1. Rinse zucchini well under running water and cut in half lengthwise. Use a spoon to remove the pulp from the zucchini, thus forming boats. ⠀
2. Rinse the chicken fillets and cut into small cubes. ⠀
3. Chop the tomato. ⠀ ⠀
4. Finely chop the garlic and herbs.⠀ ⠀
5. Add the chopped herbs and garlic to the yogurt and stir to combine.⠀ ⠀
6. Mix all chopped ingredients including zucchini pulp, salt and pepper to taste, add yogurt with herbs and garlic. ⠀
7. Stuff the zucchini and put them in a greased baking tray with vegetable oil, send them to an oven heated up to 200 degrees Celsius for 20-25 minutes.⠀
8. After 20 minutes⠀ sprinkle zucchini with grated cheese and put back in the oven for 10 minutes, until the cheese cap does not brown.⠀ ⠀
