Stuffed zucchini in the oven: what ingredients to add to the filling

Stuffed zucchini in the oven is a simple, healthy, tasty, and budget-friendly dish. The most important thing here is to prepare a good filling. But whatever you choose, all products will harmonize perfectly with zucchini. One filling option is chicken, barley porridge, hard cheese, tomatoes, and sour cream.

The recipe for stuffed zucchini boats with chicken and porridge was published on one of the cooking blogs (recepty_przepisy) on Instagram.

Ingredients:

  • zucchini – 2 pcs.
  • salt, pepper
  • vegetable oil
  • oregano

Filling:

  • chicken fillet – 1 pc.
  • boiled barley porridge – 400 g
  • tomatoes – 100 g
  • hard cheese – 100 g
  • sour cream – 1-2 tbsp.
  • salt, pepper
  • Provencal herbs

Additional ingredients:

  • hard cheese for sprinkling

Method of preparation:

1. Wash the zucchini and cut each in half.

2. Using a spoon, scoop out the center of the zucchini. Put the zucchini on a baking sheet.

3. Sprinkle the zucchini with salt, pepper and oregano. Drizzle with oil. Bake in the oven at 180 degrees for 15 minutes.

4. For the filling, pre-boil the porridge and prepare the rest of the ingredients: chop the fillet and tomatoes, and grate the cheese.

5. Mix all the necessary ingredients for the filling. Fill the zucchini with the filling.

6. Sprinkle grated cheese on top of the zucchini. Bake at 180 degrees for 35-40 minutes.
