Stuffed zucchini for dinner: what to use for the filling

Zucchini can be the basis for a healthy and tasty stew, as well as pancakes. They can also be stuffed, stewed, fried, and made into caviar for the winter.

The cook shared a recipe for delicious stuffed zucchini with minced meat, mushrooms, and cheese on Instagram.

Ingredients:

  • Zucchini – 3 pcs
  • Chicken fillet – 1 pc
  • Mushrooms – 100 g
  • Onions – 1 pc
  • Sun-dried tomatoes – 0.5 cans
  • Cheese (any) I have mozzarella, cheddar and parmesan
  • Spices (salt, pepper, sugar, thyme or oregano, garlic)

Method of preparation:

1. Cut the onion into small cubes, mushrooms, and chicken in the same way. Fry the onions first, then the mushrooms for 5 minutes, and after another 5 minutes add the chicken. Let it brown (you don't need to stir it often), then pour the tomatoes over it. Add all the spices to taste.

2. Grate the cheese, and mix it with the minced meat.

3. Cut the zucchini into two parts, and pick out the middle (seeds) with a spoon. Try to leave the edges not too thick (literally 5 mm). Fill the zucchini with the filling, put grated mozzarella, and bake until soft – about 30 minutes.
