Stuffed peppers without rice: a recipe for a hearty dinner dish
Stuffed peppers can be cooked with rice, or they can be substituted for bulgur. To make the peppers juicy, add grated raw vegetables to the minced meat.
The cook shared a recipe on Instagram for a delicious, juicy, and satisfying stuffed pepper with bulgur, minced meat, and vegetables.
Ingredients:
- Peppers – about 15 pieces
- Bulgur – 200 g
- Minced chicken – 500 g
- Onion – 1 pc.
- Carrot – 1 pc.
- Zucchini – 1 pc.
- Corn – 1 cob
- Mushrooms or eggplant
- Tomatoes – 5 pcs.
- Spices – salt, pepper, dry garlic, chili pepper, adjika, smoked and regular paprika
Method of preparation:
1. Rinse the bulgur well and add the minced meat, chopped onion, grated zucchini and carrots, mushrooms, and corn. Add salt and pepper, garlic, and mix. You can add a few tablespoons of oil to make it juicier.
2. Stuff the peppers with this mixture. If the mixture remains, put it on the bottom of the pan, and put the peppers on top tightly.
3. Blanch the tomatoes, peel off the skin, and place them on top of the peppers. Pour water to cover and put on high heat, bring to a boil. Remove the foam. As soon as it boils, add spices: salt, pepper, garlic, paprika. Reduce the heat and cook for another 40 minutes.
Serve with sour cream and a generous sprinkling of herbs!
