Stuffed eggplant with cheese and vegetables: a simple recipe

Eggplants can be used to make caviar, warm salads, and appetizers. They are also ideal for baking and canning.

A cook shared a recipe for delicious stuffed eggplant with vegetables and cheese on Instagram.

Ingredients:

  • 4 eggplants
  • 2 tomatoes
  • sweet pepper
  • green onions
  • 150 g of feta
  • 150-200 g of mozzarella
  • mix of spices for vegetables
  • salt
  • olive oil

Method of preparation:

1. For the filling, finely chop the tomatoes, peppers, green onions and put them in a bowl. Add feta, mozzarella, spices, salt and a little olive oil and mix well.

2. Mash the eggplant with a rolling pin, cut it open and remove the flesh.

3. Stuff the eggplants and bake them at 200 degrees for 30 minutes. Then take them out and add the mozzarella. Cook for another 10-15 minutes until golden brown.

You can add red onion, parsley and olive oil to taste.
