Everyone knows about the benefits of avocados, but not everyone knows what they can do with them besides adding them to salads or making guacamole sauce.

Meanwhile, this vegetable (or fruit – there is still some debate about which category the fruit belongs to) can be baked and stuffed. We've already told you the recipe for baked avocado, and today we're sharing ideas for stuffed avocados – half a fruit/vegetable with a filling will make a hearty breakfast.

  • Tuna with eggs. Boil two hard-boiled eggs, and grate on a fine grater. Mix with a can of canned tuna (it is best to take fish in its own juice), and optionally add finely chopped blue or green onions. Season with homemade mayonnaise and mix.
  • Mozzarella with cherry tomatoes. This filling can be called a conditional Caprese salad because it is made from the same ingredients. Cut the baby mozzarella and cherry tomatoes into four pieces, mix with finely chopped green basil leaves, salt, and pepper, and season with olive oil and balsamic cream. Mix well.
  • Couscous with vegetables. Boil the couscous with boiling water: put three tablespoons of cereal in a deep bowl and pour boiling water so that the water covers the cereal by two fingers. Cover and leave for 15 minutes. Cut a large cucumber and a large tomato into very small cubes, and finely chop the parsley with a knife. Mix everything with the steamed couscous, salt and pepper, season with olive oil and lemon juice, and stir.
  • Scramble with salmon. Prepare eggs like a scramble. When the scramble is ready, spoon the egg mixture into the avocado halves and top with thin slices of smoked or salted salmon.
  • Bolognese sauce. Bolognese sauce perfectly complements not only spaghetti and lasagna but it can also be used to fill avocado halves. If you don't want to go to the trouble of stewing the minced meat in a sauce of wine and tomato passata, just fry the finely chopped meat with onions.
  • Tomatoes with sweet corn. Cut the tomato into small cubes, and mix with canned corn and finely chopped cilantro. Add finely chopped blue onion if desired. Salt and pepper, season with olive oil and lemon juice, and stir.
