Who doesn't love desserts, especially in summer when there are so many berries and fruits, especially the best summer berry – strawberries. And it is best, of course, to make them yourself at home, so you can be sure of their health and safety.
FoodOboz has prepared 3 recipes for delicious and authentic summer strawberry desserts that will definitely become your favorites.
1. Lazy cheesecake with strawberries
Ingredients:
- strawberries - 400 g
- mascarpone cheese - 250 g
- cream 35-38% - 250 ml
- powdered sugar - 150 g
- cognac - 2 tbsp
- vanilla extract - 1 tsp.
- Maria biscuits - 100 g
- hazelnuts or almonds - 100 g
- butter - 50 g
- mint for decoration - 10 g
Method of preparation:
- First of all, you need to whip the cold cream well until it thickens, then immediately add a spoonful of powdered sugar, whisking after each for 20-30 seconds.
- Next, beat the mascarpone separately for about one minute, then add the cream and beat well for another 1-2 minutes.
- Add cognac and vanilla extract to the mixture and mix well again.
- Grind the nuts and cookies into fine crumbs in a blender, add the melted butter, and mix thoroughly.
- Take the bowls and put the bottom layer in them - cookies with nuts, then cottage cheese with cream, chopped strawberries on top, and a creamy layer to finish the composition.
- Garnish the top with strawberries and mint, and refrigerate for 2-3 hours.
2. Berry ice cream
Ingredients:
- frozen berries any to your taste - 500 g
- thick yogurt without additives - 500 ml
- sugar or honey - 5 tbsp
- berries and mint - for decoration
Method of preparation:
- Whip frozen berries in a blender, add yogurt, sugar, or honey, and grind everything until smooth.
- Put the mixture into a container and quickly put it in the freezer for at least an hour.
3. Shortbread cake with berries
Ingredients:
- Flour - 250 g
- Strawberries - 0.5 kg
- Butter - 100 g
- Eggs - 2 pcs.
- Sour cream - 50 g
- Sugar - 3 tbsp
- Jelly - 2 cups
- Vanillin - to taste
Method of preparation:
- Mix the flour, butter, sour cream, sugar, eggs and mash well to make crumbs.
- Roll the finished dough into a ball and put it in the refrigerator, or preferably in the freezer for an hour.
- Roll out the chilled dough and put it into a mold so that there are sides.
- Carefully place the chopped fruit on the dough.
- Prepare the jelly for the filling: dissolve it in warm water and mix well.
- Pour the jelly over the finished cake and refrigerate for 1-2 hours.
