Strawberry and rhubarb biscuit: how to make the simplest summer pie

If you don't have anything for tea, but really want something tasty, you should pay attention to this recipe. Following it, in a few minutes, you will have an unusually tasty and flavorful biscuit with strawberries and rhubarb on your table.

Ingredients for the dough:

  • Butter – 100 gr
  • Flour – 200 gr
  • Ice water – 4 tbsp
  • Salt – a pinch
  • Sugar – 1 tbsp
  • Egg yolk for greasing

Ingredients for the filling:

  • Strawberries – 200 gr
  • Rhubarb – 150 gr
  • Sugar – 2-3 tbsp
  • Starch – 1 tbsp.

Method of preparation:

1. Combine the sifted flour with sugar and salt. Add the chilled butter. Rub the flour and butter into crumbs.

2. Add ice water and knead the dough. Put it in a bag and leave it in the refrigerator for 20-30 minutes.

3. Rinse the strawberries and rhubarb and cut them into small pieces. Combine sugar and starch.

4. Roll out the dough directly on the parchment. Spread the starch and sugar on top, not reaching the edges of 2 cm. Put the filling on top and fold the edges to the center.

5. Brush the edges with egg yolk and sprinkle with almond flakes if desired. Bake for 25-30 minutes at 180 degrees.
