Stewed vegetables that are better than stew: what to add

Stewed vegetables are an ideal option if you suddenly don't know what to cook with seasonal products. The method of preparation is very similar to the well-known stew, but in addition to the usual vegetables, you should add sour cream. It gives the dish a very delicate flavor and pleasant aroma.
Food blogger Irina (ira.shaf_cooking) shared a recipe for stewed vegetables in sour cream on her Instagram page.
Ingredients:
- zucchini - 1 pc
- eggplant - 1 pc
- tomato - 1 pc
- onion - 2 pcs
- carrot - 1 pc
- sweet pepper - 2 pcs
- garlic - 1 clove
- sour cream - 1 tbsp
- salt, pepper
Method of preparation:
1. Chop the onion, and grate the carrots on a coarse grater. Fry the vegetables together in a deep frying pan until half cooked.
2. Meanwhile, cut the zucchini and eggplant into cubes. Add to the onion and carrot.
3. Cut the pepper and tomato into strips and add to the vegetables. Stir to combine. Simmer for about 10 minutes.
4. Add sour cream, garlic, salt, and spices to the dish. Cook for about 5-10 minutes until tender.
5. When serving, sprinkle with herbs and, if desired, hard cheese.
