Stewed eggplant with peppers in sweet and sour sauce: a recipe for every day
Summer is the best time to prepare healthy and tasty dishes from fresh and stewed vegetables. But remember that vegetables should not be fried, as they will lose almost all of their beneficial vitamins and minerals.
The cook shared a recipe for delicious fried eggplant with peppers, onions, and garlic on Instagram.
Ingredients:
- 2 eggplants
- 3 tbsp of starch
- 2 peppers
- 1 onion
- 0,5-1 chili pepper
- 2-3 cloves of garlic
Sauce:
- 5 tbsp soy sauce
- 3 tbsp of apple/rice vinegar
- 1 tbsp of sugar
- 2-3 cloves of garlic
Thickener:
- 1 tbsp starch
- 50-100 ml of water
Method of preparation:
1. Partially peel the eggplant and cut into large pieces (triangles or cubes). Roll in starch and fry in a deep frying pan in a large amount of oil until golden brown. Drain in a sieve.
2. Cut the pepper and onion into large pieces. Also, chop the chili pepper and chop the garlic.
3. Fry the peppers, onions, garlic, and chili peppers together over high heat until golden brown. About 3-4 minutes. Then add the eggplant and stir.
4. For the sauce: mix soy sauce, vinegar, sugar and garlic. Pour into the pan and stir.
Tip: To thicken the sauce, gradually add starch and water, stir, and simmer for a few minutes until thickened!
Sprinkle the dish with herbs before serving!
