Spinach roll with red fish, cheese and cucumbers: the easiest recipe for a delicious appetizer

Rolls are the perfect appetizer for a festive table that can be made from sponge cake, pita bread, cabbage and lettuce leaves. Fish, vegetables, canned tuna, cheese, and mushrooms can be used as fillings.

What to cook with spinach

Cook Anna shared a recipe for a spinach roll with a delicious and light filling, which is very quick and easy to prepare, on Instagram.

Recipe

Ingredients:

  • frozen spinach - 200 g
  • eggs - 3 pcs.
  • flour - 60 g
  • salt - 1/3 tsp.

Filling:

  • cream cheese - 300 g
  • fish - 200 g
  • cucumbers - 1 pc.
  • sesame seeds - to taste

Method of preparation:

1. Defrost the spinach and squeeze out excess water. Separate the whites from the yolks.

2. Put the spinach, egg yolks, salt in a blender and beat with an immersion blender until smooth.

3. Add sifted flour and mix.

How to make the base

4. Beat the egg whites until stiff peaks form. Pour into the spinach batter in three parts, mixing well each time.

5. Spread the batter on a baking sheet lined with parchment evenly and bake at 180 C for 12 minutes.

6. Take the spinach sponge cake out of the oven and immediately cover it with the same piece of parchment or cling film and leave it to cool completely.

7. For the filling, cut the fish and cucumber into strips. Take the cream cheese at room temperature so that it is easy to spread.

8. Turn the sponge cake over, remove the parchment and grease the roll with cream cheese. Then put the filling on top. Sprinkle the cucumber and fish with roasted sesame seeds if desired.

9. Roll up and put it in the refrigerator for 1 hour. Then cut and serve.
