Peach gazpacho
Gazpacho is a very light, tasty, and truly summer soup. It is always based on fresh tomatoes, with the addition of sweet peppers, cucumbers, spices, onions, garlic, and lemon juice, but often the dish is also made from other berries and fruits, which gives it a completely different, amazing taste and aroma.
Ukrainian chef and MasterChef judge Volodymyr Yaroslavskyi shared a recipe for a delicious and very unusual peach gazpacho on Instagram, which will definitely become one of your favorite dishes.
Ingredients:
- peaches - 300 g
- tomatoes - 300 g
- sweet pepper - 75 g
- white bread without crusts - 25 g
- water - 50 g
- sugar - 15 g
- lemon juice - 10 g
- mustard - 15 g
- olive oil - 35 g
- salt - to taste
- Tabasco sauce - optional
Method of preparation:
- First of all, remove the peel from the peaches, you can use a knife, or you can pour boiling water over them, hold them for 45 seconds, then transfer them to cold water with ice and easily remove the peel.
- Also remove the hard skin from the tomatoes, cut them into medium-sized pieces.
- Peel the peppers, remove the seeds and chop them.
- Cut the peaches into large slices, put them in a saucepan, add sugar, water, lemon juice, bring to a boil and cook for another 3-7 minutes, leave the peaches to cool completely.
- Cut the crust off the bread and cut it into cubes.
- Put all the ingredients in a blender and grind until smooth, add salt and Tabasco sauce, mix and refrigerate the gazpacho to cool well.
- The dish is best served with a garnish of fresh chopped peaches and peppers, which are best placed on the bottom of the plate, and pour cold peach gazpacho on top.
You can also add shrimp and scallops to the dish, it will be extremely tasty.
