The eggplant season is almost upon us. This is a versatile vegetable that is often baked, pickled, and fried. But the product reveals its flavor best in a salad. Especially if you add a spicy garlic dressing.

Ingredients:

  • eggplants ⠀
  • tomatoes ⠀
  • red onion
  • bell pepper
  • cilantro⠀
  • feta
  • garlic – 1-2 cloves
  • sweet chili pepper ⠀
  • soy sauce – 1-2 tsp
  • spices – to taste ⠀
  • vegetable oil
  • corn starch – 2-3 tbsp

Method of preparation:

1. Peel the eggplants, cut them into large cubes, add enough starch to cover all the eggplants after mixing, and fry in vegetable oil until golden brown. ⠀

2. Heat the oil in the microwave.

3. Pour over chopped garlic, sweet chili pepper, and soy sauce.

4. Pour the prepared mixture into the eggplant.

5. Chop the bell pepper and fry in vegetable oil.

6. Mix the cooled eggplant, peppers, tomatoes, red onion, and cilantro.

7. When serving, add feta cheese on top.
