Spicy eggplant and chili appetizer salad: sharing an original recipe
If you want to make a delicious appetizer that will be a great alternative to salads, choose simple vegetables such as zucchini, eggplant, and peppers. It is important not to spare spices, garlic, and chili peppers when cooking, as they will make the dish taste richer.
Cook Vita shared on Instagram a recipe for an original eggplant dish that takes only 40 minutes to prepare and would be a great lunch option.
Ingredients:
- eggplants - 4 pcs.
- garlic - 6 cloves.
- chili pepper - 1 pc.
- lemon juice - 1 tbsp.
- wine vinegar - 3 tsp.
- vegetable oil - 160 ml
- salt, pepper - to taste
- cilantro, mint, dill - 10 g each
Method of preparation:
1. Wash the eggplant and cut into long slices.
2. Transfer to a bowl, season with salt and pepper, add 80 ml of oil and mix.
3. Put the mixture in a single layer in a baking dish and bake in the oven for 35-40 minutes at 200°C.
4. Let the eggplant cool down.
5. Cut the garlic into thin slices and fry in oil until golden brown, transfer to a paper towel and season with salt.
6. Put the cooked eggplants in a deep bowl, add chopped herbs, finely chopped chili, garlic oil, vinegar, lemon juice and mix well.
7. Put everything on a dish, sprinkle with garlic chips and serve.
