Eggplants can be used to make delicious caviar, as well as salads, casseroles, pies, and canned snacks. You can also simply bake them with cheese, minced meat, and spices.

On Instagram, Savelii Libkin shared a recipe for delicious eggplant caviar in the Odesa style, with garlic, onions, and herbs.

Ingredients:

  • 3 eggplants weighing about 700 g
  • 1 large tomato
  • 2 medium onions
  • 2 tbsp of sunflower oil
  • 2-3 cloves of garlic
  • 0.5 bunch of parsley
  • salt to taste

Method of preparation:

1. Bake the vegetables, peel and chop them.

2. Put the mixture in a bowl, add grated garlic, oil, salt, herbs, and mix.

Serve with black bread!
