Spectacular Drunken Cherry cheesecake: better than any cake
Drunken Cherry cheesecake is the perfect dessert for a family tea party. The cake is extremely tender, and seasonal ripe cherries add juiciness. Berries should be soaked in alcohol.
The idea of making a spectacular Drunken Cherry cheesecake was published on the Instagram page of food blogger Yulia with the nickname julia food blog ua. It is based on ordinary cookies.
Ingredients for the base:
- any chocolate biscuits of the Napoleon type - 300 g
- butter - 50 g
- milk - 60 ml.
How to prepare the base:
1. Crush the biscuits into crumbs.
2. Add the melted butter and milk.
3. Tighten the mold with parchment.
4. Put the crumbs and form the sides and bottom of the base.
5. Put the mold in the freezer for 30 minutes.
Ingredients for the curd mass:
- cream cheese - 460 g
- heavy cream - 220 ml
- sugar - 150 g
- eggs - 3 pcs.
- corn starch - 17 g
- milk chocolate - 60 g
- shortbread crumbs - 10 g (leftovers from crushed cookies)
- alcoholized cherries - 130 g (put the cherries in cognac or rum overnight)
Method of preparation:
1. Combine all ingredients at room temperature except chocolate, crumbs, and cherries and mix until smooth.
2. Divide the mass into two equal parts.
3. Add the melted chocolate to one part, and the cookie crumbs and slightly starched and squeezed cherries to the other.
4. Put the mass with cherries into the mold, spread it out.
5. Put the chocolate mass on top.
6. Bake the cheesecake at 150 degrees for about an hour and ten minutes.
7. Let cool completely and refrigerate for at least 5 hours.
Ingredients for the cherry topping:
- alcoholized cherries - 200 g
- liquid with cherries - 50 ml.
- corn starch - 6 g
- sugar - 50 g
- gelatin - 3 g soaked in 20 ml of cognac
Method of preparation:
1. Pour sugar with starch.
2. Add to the cherries.
3. Cook for 30 seconds after boiling.
4. Add gelatin.
5. Let the mass cool and put on top of the stabilized cheesecake.
