Ingredients for shortcrust pastry:

  • flour - 450 g
  • egg yolks - 5 pcs.
  • powdered sugar - 100 g
  • butter - 250 g (chilled and cut into cubes).
  • baking powder - 1.5 tsp.
  • vanilla sugar - 8 g

Method of preparation:

1. Mix flour with powdered sugar, baking powder, and vanilla sugar in a deep bowl.

2. Add the well-chilled butter and cut into crumbs with a knife. You can also grind it with gloved hands.

3. Add the egg yolks and knead the dough until it comes together into a ball.

4. Divide the dough into 2 equal parts and wrap in plastic wrap.

5. Chill the dough in the refrigerator for at least 3 hours.

6. To speed up the process, you can put the dough in the freezer for 30-60 minutes.

Ingredients for the creamy mass:

  • proteins at room temperature - 5 pcs.
  • salt - a pinch
  • sugar - 250 g
  • sour cream 20% at room temperature - 1200 g
  • sugar-free pudding - 2 packs (1 pack - 40 g)

  • pitted cherries - 400 g (fresh or frozen)

Method of preparation:

1. In a bowl, whisk the egg whites with a pinch of salt until stiff. At the end of whipping, add sugar a spoonful at a time, whisking constantly. You should get a dense, shiny foam.

2. Add the sifted pudding to the foam and mix. Add the sour cream in parts, mixing slowly and carefully with a spatula so that the mass does not fall off.

Formation of the cake:

1. Prepare a baking sheet, and cover it with parchment paper. The sides should be visible from above.

2. Grate both parts of the dough into different plates. Cover with plastic wrap and refrigerate until ready to use.

3. Then prepare the sour cream filling.

4. Spread one part of the grated dough on the bottom of the mold. Press it down with your hands so that there are no gaps and the dough layer is more or less uniform.

5. Spread the sour cream filling on top.

6. Then the cherries – they should be on top of the sour cream filling.

7. Spread the second part of the grated dough on the cherries.

8. Bake for 50-60 minutes until a nice golden color.

Cool in a slightly ajar oven.
