Today, we're going to show you how to make bean soup with spicy smoked sausages, a perfect dish for a cold winter day. An important point: in the ingredients, we indicate that you will need broth for the soup (this is one of those products that we recommend keeping in the refrigerator or freezer at all times).
If you don't have ready-made broth, you can use water, but we advise you to go the extra mile and make meat or vegetable broth to make the soup taste richer.
- white beans (dry) - 200 g
- onion - 1 pc.
- carrot - 1 pc.
- celery - 2 stalks
- fresh spinach - 1 bunch
- vegetable oil - 3 tbsp
- spicy smoked sausages - 3-4 pcs.
- broth - 3 liters
- ground paprika - a pinch
- salt, pepper - to taste
- Rinse the beans, and cover them with cold water overnight. Then drain and cover with fresh water. Bring to a boil, then reduce heat and simmer until soft.
- In a second saucepan, fry the finely chopped onion. When soft, add the chopped carrots and celery stalk. Fry, stirring, all together for a couple of minutes, then pour in the broth.
- Bring to a boil and cook for 5 minutes. Add the chopped sausages and cook for another 5-7 minutes.
- Add spinach and boiled beans. Season with salt and pepper, stir, and cook together for another ten minutes over medium heat.
