Today we are sharing with you a recipe for cheese soup with broccoli. Light and creamy, with a delicate creamy cheese flavor – this soup is so delicious that it will not leave anyone indifferent.   • vegetable broth - 2 cups
  • carrots - 2 pieces (small)
  • broccoli - 1 piece (small)
  • celery - 1 stalk
  • onion - 1 pc.
  • processed cheese - 250 g
  • hard grated cheese - 200 g
  • cream or milk - 2 cups
  • butter - 100 g
  • flour - 100 g
  • salt, pepper - to taste

  1. Wash and peel the vegetables. Cut carrots into slices, celery into cubes, and broccoli into florets.
  2. Bring two liters of water to a boil in a large saucepan. Add the chopped vegetables, cover the pot with a lid, and cook for about five minutes.
  3. Drain the water, remove the vegetables from the pot, and set them aside for a while.
  4. In the same saucepan, fry the finely chopped onion in butter. Add the flour and fry, stirring constantly, until the mixture becomes homogeneous.
  5. Gradually add the broth and milk (or cream) to the pan. Cook until the mixture thickens (8-10 minutes).
  6. Add the boiled broccoli, carrots, and celery, and cook the soup until the vegetables are soft.
  7. Add the processed cheese and half of the grated cheese to the broth. Cook, stirring, until the cheese is completely melted.
  8. Sprinkle with grated cheese when serving.
