Today we share with you a recipe for a light rice soup with chicken and green peas. It's a perfect dish for those who want something hot, but not too heavy on the stomach. Rice in this recipe can be replaced with bulgur or thin vermicelli.
- chicken fillet - 1 pc.
- rice - 50 g
- potatoes - 3-4 pcs.
- carrots - 2 pcs.
- frozen peas - 0.5 cups
- vegetable oil - 2 tbsp
- salt, pepper - to taste
- herbs - to taste
- Wash the potatoes and carrots, peel them, cut them into small cubes, and put them in a saucepan with boiling water.
- Wash the chicken fillet, dry it with a towel, cut it into pieces, and fry it in a little oil until golden brown.
- Rinse the rice well in cold running water: the better you rinse the rice, the more transparent the soup will be.
- When the potatoes are half cooked, add the washed rice to the pot. Season with salt and pepper, bring to a boil, and cook for 7-10 minutes until the rice is tender.
- Add frozen peas to the pot and cook for another 5 minutes. Then add the fried chicken and finely chopped herbs. Cover and let the soup brew for 10-15 minutes.
