Solyanka without meat and mushrooms: how to cook a rich soup
Solyanka is a delicious, rich and very popular soup. According to the classical recipe, the first course is prepared from several types of meat, with various fresh and pickled vegetables, smoked meats, herbs and sauce. However, you can easily prepare the dish without meat.
Food blogger Anastasia Barbar (nastiabarbar) shared a recipe for a rich solyanka without meat on her Instagram page.
Ingredients:
- potatoes
- onion
- carrot
- boiled sausage
- smoked sausage
- ketchup
- tomato paste
- salt
- pickles
- bay leaf
- peppercorns or ground pepper
- olives
Method of preparation:
1. Pour water into a saucepan and bring to a boil. Then add chopped potatoes and cook until half cooked.
2. Meanwhile, chop the onion and lightly fry.
3. Grate the carrots and chop the sausage, add to the onions. Fry until tender.
4. Add tomato paste at the end. Stir.
5. Season the potatoes with salt and add the finished roast.
6. Add chopped pickles, bay leaf, peppercorns, ground pepper, and olives 10 minutes before cooking. Let it brew.
7. Serve with a slice of lemon and sour cream/mayonnaise.
