Simpler than charlotte: curd galette with caramelized apples and oranges for tea
Apples and any dough are ideal ingredients for making delicious pies and puffs. Apples go well with cottage cheese, raisins, cinnamon, and sugar.
Cook Viktoriia shared on Instagram a recipe for a delicious galette with cottage cheese and apples, which is not dry and flavorful due to cognac.
Cook's tip: all ingredients for the dough should be cold!
Ingredients:
- cottage cheese – 100 g
- flour – 120 g
- butter – 70 g
- egg yolk – 1 pc
- vanilla sugar – 1 tsp
The filling:
- apples – 3-4 pcs
- sugar – 100 g
- orange juice – 1 tbsp
- orange – 1 pc
- butter – 1 tbsp
- cognac – 1 tbsp
- sugar – 1 tsp
Method of preparation:
1. Cut the butter into cubes and mix all the ingredients for the dough except the yolk in a deep bowl, then use a mixer to beat for another 1-2 minutes until smooth crumbs.
2. Add the egg yolk and mix quickly again until a lump forms.
3. Wrap the dough in plastic wrap and refrigerate for 1-2 hours.
4. Filling: cut the apples into cubes, and sprinkle with lemon juice.
5. Remove the yellow zest from the orange and chop it, separate the orange slices.
6. In a frying pan, over medium heat, melt the sugar and bring it to an amber color, add the butter and mix until smooth. Then add the apples, oranges, and zest to the pan and caramelize for 3-5 minutes. Pour in the cognac and evaporate the liquid over medium heat, cool.
7. Roll out the dough immediately on the parchment, and sprinkle with flour. Put slices of raw apple on the edges and caramelized apples in the center, fold the edges to form a side, sprinkle with sugar on top, and bake for 20-25 minutes at 170-180°C.
