Simple vegetable casserole for a healthy breakfast: how to cook

If you don't know what to choose for a healthy and satisfying breakfast, you can make a casserole. It's not greasy, it's easy and quick to prepare. It is especially tasty to add vegetables to this dish, because they retain their maximum benefits when baked.

The idea of cooking a delicious vegetable casserole was published by Eat This, Not That.

Ingredients:

  • coconut oil - 2 tablespoons
  • onion - 1 piece
  • chopped vegetables: broccoli, cabbage or spinach - 2-4 cups
  • fresh chopped basil - 1/2 cup
  • salt - 1 tsp
  • ground black pepper - 1/2 teaspoon
  • eggs - 6 pcs
  • coconut milk - 2 tbsp

Method of preparation:

  1. Preheat oven to 375 degrees.
  2. Heat coconut oil in a large skillet.
  3. Add the onion and cook until soft for 5 minutes.
  4. Add the rest of the vegetables and cook for 5-7 minutes.
  5. Add the basil and cook for a few more seconds.
  6. Whisk together salt, pepper, eggs and coconut milk.
  7. Transfer the cooked vegetable mixture to the skillet.
  8. Pour the egg mixture over the vegetables.
  9. Bake for 20 to 30 minutes or until the eggs are cooked through.
  10. Remove from the oven and cool slightly before serving.

A very good idea for breakfast is a cheese casserole. It can be sweet or salty to taste.

Ingredients:

  • cottage cheese - 800 g
  • eggs - 7 pcs.
  • sugar - 7 cups
  • vanilla sugar - 20 g
  • sour cream - 3 cups
  • starch - 3 cups

Method of preparation:

  1. Separate the whites from the yolks.
  2. Grind the cottage cheese with sugar, vanilla sugar and egg yolks.
  3. Add starch and sour cream, mix well.
  4. Beat the whites until stiff peaks and gently fold into the cottage cheese mixture.
  5. Bake for 50-60 minutes at 180 degrees. Cover the top with foil.
