Seasonal fruits and berries are a great base for a variety of delicious pastries. Peaches and blueberries go well together. Airy meringue complements the taste of these ingredients.
The idea of making a sweet pie with peaches, blueberries, and meringue was published on the Instagram page of food blogger Anna (anna_tasty_story).
Ingredients for the dough:
- butter - 130 g
- flour - 200 g
- salt and sugar - a pinch
- cold water - 2 tbsp
Ingredients for the filling:
- peaches
- blueberries
- sugar - 1 tbsp
- starch - 1 tsp
Ingredients for the meringue:
- protein - 2 pcs.
- sugar - 70 g
- lemon juice - 2 tsp
Method of preparation:
1. Cut the cold butter into pieces, sift the flour, add salt and sugar, and rub everything together with your hands. Finally, add cold water, knead the dough, and leave it in the refrigerator for 30 minutes.
2. Roll out the dough to the size of the mold and put it to form the sides. Prick the dough with a fork. Bake for 15 minutes at 200 degrees.
3. For the filling, chop the peaches, add the blueberries, sugar, and starch, and mix everything.
4. For the meringue, beat the egg whites with the sugar and lemon juice until stiff peaks form.
5. Put the filling into the baked base and spread the protein evenly on top. Bake for 20 minutes at 180 degrees.
