Simple and quick zucchini pizza for a snack: how to prepare

To make zucchini pizza, you don't have to roll out the dough. This dish is perfect for a snack and cooked very quickly. You can experiment with the toppings.

The idea of making a hearty zucchini pizza for a snack was published on the Instagram page of food blogger Kateryna Brailo (ketiv). Instead of mayonnaise, it is better to use Greek yogurt.

Ingredients for the base:

  • zucchini - 2 pcs.
  • chicken egg - 1 pc.
  • flour - ~ 3-4 tbsp
  • hard cheese - 50 g

Ingredients for the filling:

  • thick 8-10% Greek yogurt  - 2 tbsp + 1 tbsp tomato sauce for the main sauce
  • baked chicken (thigh or fillet)
  • sweet bell pepper, cherry tomato + grated hard cheese/parmesan 50 g
  • favorite spices

Method of preparation:

1. Grate the zucchini on a coarse grater (squeeze out the excess liquid), add the chicken egg, flour, and grated hard cheese.

2. Mix everything well.

3. Put the zucchini mixture on a baking sheet covered with parchment, forming a round cake.

4. Bake in a preheated oven at 180 degrees for 15-20 minutes.

5. Spread the half-cooked cake with sauce (either yogurt/sour cream + tomato sauce, or yogurt or tomato sauce).

6. Layer the filling: chicken, bell pepper rings, cherry tomato, spices, and grated hard cheese on top.

7. Bake at 180 degrees for another 20 minutes.

8. Garnish the pizza with herbs if desired.
