In dishes such as dumplings and chebureks, the most important thing is dough. The most one is choux pastry. It does not require many ingredients, is quick to prepare and easy to work with as it is elastic, soft and does not fall apart.

Food blogger Iryna (ira.savraz) shared a recipe for universal choux pastry for dumplings and chebureks, based on potato broth, on her Instagram page.

Recipe for choux pastry for dumplings and chebureks

Ingredients:

  • broth - 1 glass
  • vegetable oil - 2 tbsp
  • flour

Method of preparation:

1. Peel the potatoes, cover with water, salt and boil until tender. Strain the broth when ready.

Important: use hot broth for cooking.

2. Add oil and flour to the prepared broth (add as much flour as the dough will absorb). Knead the dough. It should be soft and elastic.

Important: You do not need to add additional salt to the dough because you have already salted the potato broth.

3. Once the dough is ready, put it in a bag and leave it to either cool completely or put it in the refrigerator overnight.

4. At this stage, you can cook dumplings or cheburerks.
